I made twice-baked potatoes yesterday. They were yummy. They're also very good cold or reheated the next day.
Recipe: bake potatoes for 40-60 minutes at 400F (or y'know, microwave if you have that level of technology) then cut in half and scoop the squooshy insides into a bowl, add butter, grated cheese, (sourcream if you want), herbs, garlic, broccoli or other finely chopped veges - I added some fresh hot-pepper; mix, then scoop back into the potato skins - or "jackets" as Joy of Cooking calls them - put some grated cheese on top and bake another 10-15 minutes.
Mmm, potatoey goodness.
